And if I still had the opportunity on a Saturday to catch the future mother-in-law on a visit to her son's house :) I put her to work. It really helped me a lot, because I don't know what I would have done without my help (he also participated, my love). The recipe is for 20 250g jars.

And that's how we organized ourselves: I love grilling, my mother-in-law chopped onions and beaten eggplant, then I peeled it with the rest (I participated in almost all the activities required by such a recipe). :)

I baked the eggplants, peeled them and drained them. The onion was finely chopped. The peppers are passed through the mincer. Drain the juice if there is too much.

I used a large bowl of tuci (cauldron), in which I put the oil, I hardened the onion and then I added all the vegetables, stirring constantly so that it doesn't stick. Towards the end (about 20 minutes before it was ready) I added salt, pepper, broth and bay leaves. I don't know how long it took until it was ready (I think about an hour), but the tip is that the oil comes out on top.

I put them in jars and then in the baimaren. Leave for 10 minutes after the water starts to boil to empty. I took them out, put them down with the lid on and covered them with a towel.

Now, I sit quietly in the pantry (part of them because I also met my friends :)) waiting for winter.
